Could you explain how pound uses cookies to maintain sessions?  Is pound
injecting cookies it creates into headers back to the client?  When the
client passes an http request with the cookie, how does pound know which
backend to send it to?

Pound adds no cookies to the requests. What it can do is keep track of
cookies set in the responses, and match them against future requests.
